The sweet temptation – make your own jam and pamper your palate
So get the fruit and put it in the jars – your taste buds will thank you! With a few tips and tricks when cooking jam, you can quickly achieve a perfect result.

First of all: what is the difference between jam, marmalade, jelly or simply fruit spread?
For many people, a sweet spread is a must on their breakfast roll. In common parlance, the term "jam" is often used. However, when you walk through the supermarket, it quickly becomes clear that the products are sold under different names. What we generally think of as jam is not just sold as marmalade in stores, but as jam, jelly or fruit spread. And while common parlance subsumes all of this under the term "jam", in reality there are significant differences between the various spreads.
The jam regulation states that marmalade must be made from citrus fruits, water and sugar. At least 20 percent of the fruit should be included in the spreadable mixture, including peel, pulp or fruit juice. Only oranges, lemons and other citrus fruits may be used in marmalade.
Jams are made from fruit such as plums, strawberries, raspberries, cherries or apples. Similar to marmalade, but with a minimum sugar content of 55 percent.
Jelly, unlike jams and marmalades, is made without solid pieces of fruit. Instead, fruit juice is cooked with sugar and gelling agents, resulting in a solid, jelly-like consistency. Jellies are made from fruit such as quinces and apples.
All products that do not fall into the above categories are called fruit spreads. An example of this are products with a fruit content of less than 35 percent or with sweetener instead of sugar. Preservatives are not required for fruit spreads and it is permitted to add ingredients such as oils, fats or spices that are prohibited in the other products.
What ingredients do you need to make your own jam?
The basic ingredients for a classic jam are fruit, gelling sugar and pectin. You can choose the fruit according to your taste - strawberries, raspberries, cherries, peaches or even apricots are good for making jam, even if it is not actually jam but more like preserves. It is important to note that the fruit should be ripe but not overripe. The gelling sugar provides the desired consistency and already contains the necessary pectin.
However, if you don't want to use sugar, you can also use alternative sweeteners such as agave syrup or birch sugar. You can add another spice, such as vanilla, to give the jam a special flavor.
Step-by-step instructions for the perfect result
Do you have all the necessary ingredients and tools ready? Then let's get started!
- First, you should prepare the fruit by washing it, peeling and cored it if necessary and cutting it into small pieces.
- Then put the fruit in a pot and add the gelling sugar. A common rule of thumb is that you need about 1 g of gelling sugar for 500 kg of fruit.
- If you like, you can add pectin or vanilla to refine the taste.
- Now let everything cook for about 30 minutes until it reaches a syrupy consistency. Test whether the jam is firm enough by dropping a drop onto a cold plate. If not, you can add a little more gelling sugar and extend the cooking time.
When cooking jam, it is important to stir the ingredients into a pan and bring to the boil slowly and carefully. Stir constantly to avoid burning. As soon as the mixture boils, reduce the heat and allow the jam to simmer for a few more minutes.
- You can then fill the jam into sterilized jars, close them and turn them upside down for 5-10 minutes to ensure a longer shelf life.
Now you can justifiably sit back and look forward to the opinions and reviews that your homemade jam will elicit from guests and friends and is also a great gift idea for friends and family.
The beauty of making jam is that you can choose the ingredients according to your own preferences and tailor the jam to your needs. For example, you can replace sugar or gelling sugar with alternative sweeteners to reduce the sugar content. Jams are varied and there are countless recipes you can try.
